Cucumber-Mango Salsa Recipe
This is a salsa my friend from Trinidad taught me when I was in the navy. We serve this at all Super Bowl parties and picnics in our family! Delish!
This recipe is very similar to the mango salsa served on a Mexican chain restaurant's Mango Salad (the manager told me how to make it). In that recipe they add some chopped red pepper, red onion instead of white, and don't use garlic. So, I use red onion, add chopped red pepper, and omit the garlic. It is very refreshing, and I now have mango salsa cravings! Hint: If you don't want to peel and dice mangos, many grocery stores have bags of chopped mango in the frozen fruit section, however it is a little pricey.
I absolutely LOVED this salsa! Served it over crab cakes with lemon dill rice. I thought the mango I used wasn't ripe enough but it was perfect; not mushy. The jalapeno (seeded) didn't make my salsa hot at all. I was happy! I think I'll add more lime juice though, or even lemon juice next time.
A crunchy salsa comes together with diced mango, apple, cucumber, and yellow bell pepper. Toss with lime and orange juice, cilantro, and jalapeno for a tangy side dish.
Looking for a refreshing salsa for a warm summer evening? This is our favorite. Serve with tortilla chips. This is also fantastic served on white fish. I often use a canned jalapeno instead of fresh.
this is a great recipee. I also added red, green and yellow diced peppers.
This spicy, fruity blend of fresh ingredients will turn any dish into an exciting new favorite!
Cucumber, mango, and black beans are tossed together with lime juice and cilantro for a refreshing and crunchy salad.
Lime juice and cider vinegar balance the sweetness of the tomatoes, onion, mango, and sugar in this salsa recipe.
