Dad's Leftover Turkey Pot Pie
Left over turkey meat joins forces with peas, carrots, and green beans in a savory pot pie. The recipe makes 2 pies to feed a good-sized family or to have a pie for later.

I have made this pie every Thanksgiving for the last 5 years, and it never disappoints!! Everybody loves it and it's gone in the wink of an eye! All I do different is add some garlic and a little more dark meat. Fabulous!
I am a terrible cook! Nothing I cook turns out GOOD! Nothing!! However, this was the best!!!! I am so proud of myself. The best pot pie I have ever had!! I ate it for Breakfast, lunch, snack and dinner. I simmered my veggies a little longer, added canned cubed potatoes (that I drained), and added a little more chicken stock & milk at the end (only because it looked a little thick). I used Pillsbury frozen deep dish pie crust, and topped it with the Pillsbury roll-type pie crust for the top. (You can find this in the canned biscuit section. Two rolls came in the box). After putting the roll-type pie crust on top, I pinched the edges to make a design. This was beautiful. I am a firm believer to always use "name-brand" stuff, so I used Byrd's Eye Frozen Peas and Byrd's Eye Frozen green beans. Yumm! Yumm! Also, I did not put my pies in a pie dish, because the Pillsbury Frozen Deep Dish Pie Crust were already in a metal pie pan. I placed both pies on top of a baking sheet. Note: While I was preparing
This was a delicious recipe for that leftover turkey. I was lazy and topped ours with mashed potatoes (I am incapable of producing a 'pretty' pie), but I am sure the pie crust would have been terrific. There's a nice combination of vegetables here, but I think this is one you could play with a little based on what you have on hand. This is my new base recipe for pot pie.
I made this recipe the first time almost exactly as written. It was amazing. My husband ate almost half the darn pie himself. It is now his most favorite thing I ever made, and I have three of this pie in the oven as we speak. Only difference this time; chicken. So dang delicious.
Great pot pie! Used only slight modifications: Used fresh carrots and frozen peas instead of a pea/carrot mix, cooked the veggies in broth instead of water and used the broth to make the sauce. Will try sauteing the carrots and celery with the onion the next time. This was a HUGE hit with the family. Will be using this recipe again and again.
I made this for dinner and pretty much followed the recipe closely. I did ad more veggies and turkey as i had a lot. I also added a can of cream of onion soup. It was delish!!!!
