This was a delicious recipe for that leftover turkey. I was lazy and topped ours with mashed potatoes (I am incapable of producing a 'pretty' pie), but I am sure the pie crust would have been terrific. There's a nice combination of vegetables here, but I think this is one you could play with a little based on what you have on hand. This is my new base recipe for pot pie.

This was a perfect post-Thanksgiving recipe. My husband loved it (he isn’t always enthusiastic about food he likes but mentioned how much he liked it several times) as did my mom. My dad likes those premade pot pies and was less excited about this...I think it was more veggies than he prefers. I used some leftover ham as well as turkey (but could have done fewer veggies and more meat to make him happy), but I used up a lot of carrots and celery left from the crudités plate, leftover green beans (fresh ones that were extra I hadn’t needed for my casserole), a leftover pie crust and finished off my carton of chicken broth. I didn’t have a second pie crust to top it, so I made a butter, flour and Parmesan crumble topping and crossed my fingers...it turned out pretty well! I’ll save this recipe to use again when I have leftovers to spruce up!
